There are many causes of swallowing difficulty, or a medical term - dysphagia. This includes Stroke, Parkinson's disease, Muscular Dystrophy, ALS, nose/mouth/throat cancer, etc.
Individuals with dysphagia often do not drink enough water or get enough calories through their meals. This is because most thickeners are lumpy and taste unappetizing.
